Five Minute Mash

Ingredients:

  • Potatoes

Method:

Chop the potatoes into roughly 2-4 inch blocks

place them into a microwaveable container with a lid or sealed with microwaveable cling film

put them into the microwave for 5 minutes on full power (850W)

remove from microwave and cover or place in a bowl of boiling water from a kettle

leave for one-two minutes for the excess starch to dissolve

decant water and mash as normal with butter, a little salt and some chives
